    Default Caramel slice

    Hi everyone, I feel like making some caramel slice. I have caramel top n fill and have made the slice before the problem is I find the biscuit base and the chocolate go to hard one I do the caramel and when I go to cut it the caramel goes everywhere. Can anyone recommend how I can make the caramel a little more sticky so it doesn't lose shape?

    If you put a little butter or copha in your chocolate when you melt it it doesn't set as hard... Maybe about 60g fat to 150g chocolate? I can't remember exactly...

    You could always put it back in the oven for 5 minutes after you've put the caramel on the biscuit base. That would harden the caramel up a bit, but I've never tried so I don't know how long. I would err on the shorter side. I've only ever made my caramel from scratch (or from condensed milk and golden syrup etc to be exact).

    I LOVE caramel slice!!!

    Yes I was going to make it from scratch also but have no golden syrup .. Hmmm yum
