I could have written your post myself. I don't think it's lazy, nutritious food is nutritious food, no matter how "easy" it is to prepare. I agree with you though, I don't want my kids growing up thinking dinner is all nuggets and meatballs, so I usually have two or three "kid nights" where I make something I know will be more agreeable with them (pizza, pasta etc) and the other nights I continue to make the things I like. After all, if I'm putting in the effort, I want to enjoy what I'm eating too!
