How does one legally name a guardian for their child? I'm still tossing up between two people but would like to know where you can go/what you do once you have chosen and they accept. Do you have to create a whole will or can you do it separately?

Not sure, we thought it most logical and easy to just include it in our will.

You need to go to a lawyer and get a will drawn up by them including guardianship. You can do your own will but it is not a strong as one drawn up by a professional and worded properly.
