I have a super quick curry chicken receipe which I think is yummy. DD2 thinks its too spicy but since its made with BBQ chicken its easy to just put some chicken aside for her.

    BBQ Chicken
    diced onion
    500g pkt frozen mixed vegies
    1 cup water
    2 cups milk
1/4 cup dutch curry & rice soup mix
    1 tblspn curry powder
    2 tspn chicken stock powder

Break up chicken into smallish pieces.

Microwave vegies, onion & 1 cup water for 5mins on high.

In a saucepan combine milk, soup mix, curry powder & stock powder and stir continuously until boiling. Add vegies and water, combine well. Fold in chicken, bring back to boil, reduce to slow boil and cook for a further 2-3mins.

    Serve with rice.
