    Default Birthday cake help!

    I'm making a cauldron cake for my dd's 9th birthday. Sounds easy enough, but I want to use chocolate on the outside. Dark chocolate. How do I get it coated in melted chocolate and have it set evenly without running down?

    I would use chocolate fondant. It's a suger paste you can get from cake decorating stores. Once you put it on the cake brush it with a tiny amount of water to make it shiny.

    I can't find any that are gluten and dairy free, are there any online?

    I have a recipe for dairy free ganche but it will run down the sides. It will leave it nice and smooth looking though. Then you just use a hot knife to clean the board.

    You could always wait for the ganche to set a bit then put it on like icing.

    Could you just melt chocolate and spread it on to the cake? It should set quite quickly, especially if you put the cake in the fridge for a while beforehand to cool it down a bit?

    You could try and temper the chocolate which would make it all shiny and give it a good crack when you cut the cake, but tempering chocolate is a bit fiddly.

    I will put the cake in the freezer for a day, so should it set quite fast?

    Yes, would set very fast! You can always use a knife dipped in hot water if it sets *too* quickly.
