* The Perfect Fondant *

I have made marshmallow fondant a few times and always get comments on the taste, people are surprised it tastes so good as normal fondant tastes like cr*p IMO.
All I do is have a heap of sifted icing sugar ready. Then melt white marshmallows (100g will cover a normal 20cm round cake) in the microwave. Stir your colour into the melted marshmallows. Make it a bit brighter than you need as it will lighten as you add the icing sugar.
Stir icing sugar into the melted marshmallows till it becomes stiff and hard to stir. Then turn/scrape it out onto a pile of icing sugar on the bench. Knead icing sugar into it until it's no longer sticky to touch. When rolling it out make sure you've got plenty of icing sugar on the bench so it doesn't stick.
If you are wanting to make decorations out of marshmallow fondant knead a little tylose powder into the ball you'll be making the decos out of. This will make it set hard. You can buy tylose powder from cake shops.
Oh one great thing about marshmallow fondant is if it starts to get a bit dry etc as you are trying to roll it just microwave it a little bit to soften it and you can start over. Don't think you can do this with regular fondant.

You're welcome! When I first wanted to make fondant I was googling recipes and thinking how hard it sounded then stumbled across the marshmallow one.
I would try a cake shop for food colouring.
