Looks like blood to me. Yuck.
If it's a good quality steak, even asking for well done it should still be soft and melt in the mouth, not chewy or tough. It's when they burn it it becomes tough.

burnt. lol i once got a steak sandwich that when i bit into the bread turned a nice pink colour barf
you only live once...
but if you do it right ~ once is enough.

I might add I only get steak at certain places because blue needs to be cooked right so you don't get sick
