Default Which specialist for food intolerance?

My DS was one yesterday. He's had a little cow's milk in the last week or so and I am fairly sure this is causing his eczema to flare up.

He's had skin prick testing and is not allergic to anything. I suspect an intolerance to either dairy, lactose, cow's milk protein - I just don't know.

Tomorrow we are off to Dr. I think I'd like a referral to someone who can help with an elimination diet or similar to try to get to the bottom of this.

I'm not sure where to start though - dietician, nutritionist, pediatrician? I am in Hobart so specialist clinics etc are not an option. Any suggestions greatly welcomed.

ETA I'd also like advise from specialist on cow's milk substitutes. So many differing opinions on soy, nut milks, oat milk etc...

My DS2 has had food intolerance since I started him on solids. He is intolerant to a food chemical called amines (in things like tomato, avocado, cheese etc) and we went to a dietician who dealt with children. Fingers crossed your dr has a good children's dietician for you to see.
