    Default Vegan meals

    My best friend who I haven't seen fir 2 years is coming to stay with us in a week and she's vegan. I have no idea what to cook for dinner...... Help please!

    Last time I had someone over, I made pumpkin soup for an entree, creamy roast veg pasta for the main, and a tofu cheesecake for dessert.

    I have a staple vegan menu as we have such a mix of family/friends with different dietary requests!

    I always do bruschetta (Toasted sour dough, rubbed with garlic and tomato/basil/red onion mix) and a garden salad

    And I do roasted cherry tomato pasta , and for the meat eaters I cook garlic prawns or sometimes pancetta separately and add to their portions!

    In a big baking pan add 3 punnets of ripe cherry or grape tomatoes cut in half, 6 garlic cloves smashed, 1 red chili chopped, salt, pepper, a splash of balsamic and about 1/2 cup olive oil , roast in a low oven ( about 140) for about an hour ( meanwhile put water on for pasta and cook 10
    mins before you want to serve)

    Take pan out of oven and add a lot ( I use a whole bunch!) of chopped fresh basil and add cooked pasta and mix letting the pasta soak up the tomato mixture

    Dessert is Margarita Granita ( or just lemon if you don't want the alcohol !)
