    Default Chicken and rice recipe for dinner tonight

    I'm got out chicken drumsticks and need some idea for dinner
    But I have no food cause my shopping day is tomorrow.
    But I do have rice, mushroom soup (can) carrots and the other stuff like salt n pepper

    Please give me some inspirations.

    One of my favourite things to do with
    Chicken pieces is what my dh calks "breaded chicken" it was my mums recipe
    You mix equal part of soy and tomato sauce, did the chicken in and coat with flour. Bake in oven
    Tastes so good

    Otherwise could you do a mushroom chicken?

    I was thinking chicken and mushroom but not sure on what or how to cook it??

    If you have a tin of tomatoes and an onion you could make a chicken cacciatore type thing.
    Fry onions and garlic and then add tomatoes. Add salt and pepper.
    Cook it down. Add mushrooms. Cook a bit more.
    Roast the chicken on the oven and serve all together.
    I do this All the time and add a tin of chickpeas or butter beans when you add tomatoes and fresh herbs at the end.

    Do u have a few hours to spare? I like nigella's long roasted lemon and garlic chicken. It's effortless. You don't even need to peel the garlic!

    Slow Roast Garlic Lemon Chicken
    Nigella Lawson

    Serves 4 to 6

    Ingredients

    2-2.25kg Chicken (cut into 10 pieces)
    1 head Garlic separated into unpeeled cloves
    2 unwaxed Lemons cut into chunky eighths
    fresh Thyme
    3 tablespoons Olive Oil
    150 ml white wine
    Black pepper

    Method

    Pre-heat the oven to 160ºC/gas mark 3.

    Put the chicken pieces into a roasting tin and add garlic cloves, lemon chunks and the thyme; just roughly pull the leaves off the stalks, leaving some intact for strewing over later.

    Add the oil and using your hands mix everything together, then spread the mixture out, making sure all the chicken pieces are skin side up.

    Sprinkle over the white wine and grind on some pepper, then cover tightly with foil and put in the oven to cook, at flavour-intensifying low heat, for 2 hours.

    Remove the foil from the roasting tin, and turn up the oven to 200ºC/gas mark 6.

    Cook the uncovered chicken for another 30-45 minutes, by which time the skin on the meat will have turned golden brown and the lemons will have begun to scorch and caramelise at the edges.

    If you don't have a allergis to peanuts then sticky chicken is a winner in our house.

    1/4 peanut butter chunky if you have it
    1/4 cup sweet chilli sauce
    1/4 cup soy sauce

    500g of chicken (we've tried it with all different cuts but not drumsticks sorry)

    Marinate for as long as you can
    Then bake in oven 40mins at 180 maybe keep an eye on it though

    Thanks for your recipes. They are really yummy.
    I ended up baking chicken with tin mushroom soup with carrot and onion served with rice

    Beautiful
    I think I will stock up tin soups cause they are handy.
