Default Best way to cook flake please

I brought some flake (gummy shark) yesterday, it's I'm assuming the flake you get in fish and chip shops? Anywho, it's thick like the size of a salmon portion would it be ok if I cut it in half lengthways and batter it to deep fry? Will it cook thru? I wanted fillets but they had none.
