    spanish onion,
    cucumber,
    cherry tomatoes,
    avocado and a nice dressing. That's about it for us.

    I don't put veggies or chickpeas or anything in it unless I'm have it as our main, because our main meals usually always consists of veggies and or beans.

    The one I made tonight has lettuce, tomato, fried capsicum, fried pine nuts and feta. Balsamic vinegar and EVO dressing.

    I do a yummy noodle one with soft noodles, coriander leaves, shredded carrot, a bit of lime juice, sweet chilli sauce and some fried fish. So yum.

    I'm the only one in the house who eats salad. I love Rocket so always use that. I add tomato, sometimes cheese depending on my mood, some lemon or lime juice for a dressing and that's usually it! Sometimes cucumber and red capsicum, too.

    I like rocket and baby spinach with pine nuts or pepitas, feta and cherry tomatoes. Sometimes I like to add cucumber and dill, but I prefer to keep it pretty simple.

    I had a really yummy salad today which was made in a thermo - it was beetroot with onion, carrot, coriander, parsley, green apple and some other things...it was really yummy.

    Just peeled fresh raw baby beetroot cut into little cubed pieces , trust me it's yum ( I don't liked tinned beetroot)

    I'm addicted to goats feta at the moment, it's creamy and sweet and tangy!
    Shaved parmesan is great with rocket salads or I get this great Persian marinated feta and use the oil as the dressing

    Made a tuna nicoise salad for lunch tomorrow- tested it and it was really nice!

    Boiled egg chopped up
    Handful chopped green beans steamed for ~2 min (just steamed it over the same water I boiled the egg in)
    Small can tuna
    Red onion
    Tomato
    Canned Cannellini (sp?) beans, drained
    Basil & chives

    Dressing 2 tbsp olive oil, 1 tbsp lemon juice & 1 tsp Dijon mustard.

    Looking forward to lunch tomorrow- and I'll have to come back & try some of these other salads sometime!

    My favourite salad is just mesclun lettuce, sliced snow peas and cucumber with a dressing made of rice wine vinegar, sesame oil, mirin, soy sauce, caster sugar and wasabi. Love love love it.

    My second fav is just lettuce, cucumber, green capsicum, avocado, SD tomatoes and persian feta (seriously, I could eat a whole container of this stuff if it wasnt worth the price of a gold bullion).

    Love a good roasted pumpkin salad too!

    I used a recipe for a salsa-inspired side salad that I really enjoyed:

    Diced tomato, diced red capsicum, corn kernels (tinned), chopped coriander and some mayo mixed through. Add some hot sauce if you like it spicy. I've also added avocado.
