    Default Chicken soup help!

How long does it take until my chicken soup (more like a stock really) stops tasting like water and starts tasting like chicken?

I'm really impatient however it so far tastes like nothing. It has:

    1x whole chicken
    2x large carrots, chopped
    2x celery sticks, chopped
    4 x brown shallots, chopped
    lots of garlic
    thyme
    parsley
    salt
    pepper
    1x vege stock cube

    TIA!

How many cups of water have you used? I usually use 1 tspn of stock per cup of water which gives it a nice boost of flavour, maybe you haven't used enough stock? If you are making your own stock using your own veg and chicken it usually takes a few hours, but even then depending on the flavours you have used you might still just get a subtle taste more then a explosion of flavour.

I used to add a bit of paprika to mine but then someone told me to add a little bit of curry powder. Made a huge difference! Loved it.

I think I was just impatient, it tastes delicious. Like nan's chicken soup of old. Loves it.

But it's a bit of work isn't it!? I need to take the meat off the bones once it's cooked and put it back in, and skim some off the fat off the top. If I wanna do it properly, I won't be eating it til tomorrow!

when you serve it if you can make some gremollatta it makes it sooooooo much better - (especially since I read that you were sick!)

gremollata - chopped fresh parsley, garlic and lemon rind.

Yep, I chopped the whole baby up! First time I've ever cut up a whole raw chicken. Impressed?

Yummmmo gremolatta! I love it on Osso Bucco. Will definitely make some for serving time!

    Next question:

Best way to clarify a soup? The scum on top looks rather unappealing!
