    Good Morning,

    I am so excited I never knew about the cake section I absolutely love baking and cooking. All your cakes look very amazing. I am hoping it is ok to ask a few questions.

    My cakes mostly come out fine but I have issues when it comes to the icing butter cream side of things. Could you lovely ladies possibly give me some pointers or even a recipe or two. Mother's Day is coming up and I would really love to surprise dh mum with something special. Also how do you get the butter cream to stay firm,

    I've never tried making it, but apparently buttercream with egg whites is supposed to give the best results. I've watched a number of youtube tutorials, and there appear to be two main types, both using roughly the same ingredients, but different methods:

    I've never made any of the above, but am curious about trying them out. I've bookmarked both recipes and was going to trial them over Easter but I didn't get around to it.

    I've only ever used the Australian Womens weekly recipe of beating icing sugar with butter then adding a couple of tablespoons of milk.

    I use this Swiss meringue buttercream recipe. It's wonderful!! Makes a huge amount so half the recipe. Just leave the raspberries out if you don't want the flavour.

    It is all cake, carved into the dragon shape. Then covered in buttercream, then fondant scales.
