I LOVED The White Tiger by Kylie Chan. It is the first in a trilogy and I recently reread them all in a week, so easy to read.

I just finished reading The Happiest Refugee by Ahn Do and I loved it, I actually had to stop myself reading so as to not finish it too quickly.
If you liked Mao's Last Dancer try reading the Amy Tan books, the Kitchen Gods Wife and Joy Luck Club etc.
Another author I love is Joanne Harris especially her french set books, Five Quarters of the Orange, Coastliners, Chocolat, etc.

Paulina Simons. The Bronze Horseman. Great book. The trilogy gets a bit tired after a while but the first is a can't put down read. And I like her other books.
Also love The Poisonwood Bible. Great read.
Anything by Jodi Picoult (but seems you've read those!)
