    Thanks all, lots of recipes there. Dd loves tofu so we just had tofu marinaded in tamari on skewers with mushrooms over rice last night, and will have stir fry with rice tonight, use the rest of the tofu in it and toss in a can of kidney beans.

    Unfortunately this is also a gluten free house. I can't even have $1 bread for myself without somehow making her sick

    I do a risotto dish (can use normal rice too though) by cooking rice in chicken stock adding a can of crushed tomatoes vinegar salt n pepper a bay leaf and onion garlic.. Serve with Parmesan .. Very yummy!
