    Default what to do with leftover roast beef?

    we had a rolled roast for tea last night (yumm!!) and leftovers for luunch today but still have a fair amount of beef left and dont know what to do with it. DH's only suggestion is a pie. my version of a pie is to cube up beef add gravey, put in a dish and top with puff pastry. i sooo dont feel like that. any suggestions on what to do with it?

    Slice up, add to salad greens and onion then make a Thai dressing and have Thai beef salad.

    Cube up, make a stroganoff sauce (onion, tomato paste, brandy, garlic, paprika and sour cream) and serve with pasta.

    When we have leftover roast stuff- meat, roast veg, green beans etc I fry it all up the following morning with a lump of butter and some salt and wolf it down. Fry up is the most delicious breakfast.

    I always use leftover roast as a pizza topping, especially if you have roast pumpkin etc to put with it. If I do a roast lamb I even use leftover gravy as the base on the pizza.

    Some good suggestions - I would probably do the thai beef salad.

    You could also do
    -beef rice paper rolls
    -beef burritos/enchalandas
    -beef noodle soup (japanese or vetname flavoured)

    ohh yum beef strogonoff! i havnt had that for ages. im pretty sure i have everything for it too.
