Ahh glad it worked!!! Yeh, its surprising that it will continue to cook even out of the oven. Now you have the basics you can tweek it to your oven.

So if the pan is super hot, it won't burn it will it? I can imagine me wanting to flip it for fear of burning...

nah it should be fine - you want it smoking hot and then I turn it down to about half way maybe?? thats why you don't really need oil because oil with burn. A heavy based pan is best. If its not hot enough the meat will become really tough.
Oh and thats assuming you finish in oven - if you doing it all in pan you will need to adjust heat
