Default Coleslaw - Easiest way to prepare carrot?

At safeway they did not have the pre-packeged coleslaw mix, so I bought the cabbage and carrot.

What is the easiest way to shred/grate the carrot?

Grater? Or you could use a vege peeler....depending on how thinly your vege peeler slices.

I would say the grater would definitely be the quickest way.
Not sure about preparing the night before.
