  • Freezing meals

    Hey everyone,

    I’ve taken a position at work that requires me to work to the early evening and by the time I get home from work the kids are normally in bed.

    My husband is struggling with dinner (I usually cook) he is amazing at cooking but he can get overwhelmed easily with trying to cook to our kids preferences. I have been cooking the meals of a early morning ready for that night but doing this it is making our mornings feel hectic.

    Does anyone have any ideas on what I could make on a weekend ready for the week and place in the freezer so all my husband has to do is heat up the meals in the microwave, oven or stovetop.

    Some of my freezer faves that my DD also loves are:
    Spag bol
    Shepherd pie
    Lasagne
    Risotto
    Soups
    Curried sausages
    Curries (mild if DD eating)
    Home made schnitzels
    Home made fish fingers
    Home made chicken nuggets
    Zucchini slice
    Rice slice packed with veg
    Quiche
    Savoury mince
    Meatballs

    I’m sure there’s more but that’s basically what’s in my freezer ready to go at the moment.

      Thanks for that. I’ll look at some of the recipes. I normally always have spaghetti bolo ready to go in the freezer but there is only so much of that one can eat [emoji23]

        I find they all freeze and reheat in microwave well

          I got a recipe from here - chicken breast (think I used 4-5), in the slow cooker sprinkle over a packet of taco mix and a bottle of mild salsa, Cook for 4 hours, shred (I used an electric mixer) and freeze in portions to make quesadillas (just add grated cheese) or tacos.

            Yaaaas! I made that too after reading the post. It's sooooo good. I have bags of it in my freezer for midweek dinners.

              Freezing meals

              Another idea- you could do slow cooker dump bags. Not something I’ve done personally but something I’ve always thought of doing (I’m just not a fan of casserole type dishes). I’m sure google will have ideas of what ones to do. I do do this with smoothies just put all your fruit, nuts ect in a snap lock bag add your liquid and throw a bag in.

                  This is a good one for kids and something a bit different, should freeze well (we always eat the lot!) and you could just use microwave packet rice
