This is a staple in our house, i also make gluten free single serves of this when i have a friend with coeliacs over for lunch, i simply lay a small rash of bacon in a muffin pan and pour the mixture on top, cooking till its golden. I also make it without a pastry top and sometimes i add cheese for a change! It is very budget friendly mean. I always purchase bacon by the kg when it is on special and freeze in small amounts. I use Black and gold Pastry with this recipe as i feel it gives the right amount of flakyness!
