Sushi Ham Balls

Ingredients
1 cup sushi rice, rinsed
1 1/4 cups water
2 tablespoons sushi vinegar
1/2 small avocado
1/3 lebanese cucumber
100g shaved smoked ham, cut into 3cm strips


  1. Place rice in a saucepan and cover with water. Bring to the boil on high. Reduce heat to low. Cover and simmer for 15minutes. Remove from heat and set aside, covered for 10 minutes.
  2. Line a baking tray with baking paper. Transfer rice to a bowl. Stir through vinegar spread rice on tray to cool.
  3. (kids can do this part) Using wet hands shape rice in to tablespoon sized balls Poke your finger into the centre and insert a piece of avocado and cucumber. Reshape the rice around filling.
  4. Wrap a strip of ham around each rice ball.
