Sushi Ham Balls
1 cup sushi rice, rinsed
1 1/4 cups water
2 tablespoons sushi vinegar
1/2 small avocado
1/3 lebanese cucumber
100g shaved smoked ham, cut into 3cm strips
- Place rice in a saucepan and cover with water. Bring to the boil on high. Reduce heat to low. Cover and simmer for 15minutes. Remove from heat and set aside, covered for 10 minutes.
- Line a baking tray with baking paper. Transfer rice to a bowl. Stir through vinegar spread rice on tray to cool.
- (kids can do this part) Using wet hands shape rice in to tablespoon sized balls Poke your finger into the centre and insert a piece of avocado and cucumber. Reshape the rice around filling.
- Wrap a strip of ham around each rice ball.
