White Christmas Coconut Bites


Ingredients
250g copha
2cups rice bubbles
1 cup desiccated coconut
1 cup icing sugar, sifted
1 cup milk powder
3/4 cup sultanas
1/2 cup chopped red and green jellybabies


  1. Lightly grease a 20x30cm slice pan. ine base and sides with baking paper. Place copha in a small saucepan. heat on low, stirring, for 4-5min until melted. Transfer to jug and allow to cool slightly.
  2. Meanwhile, combine all remaining ingredients in a large bowl. Pour in copha and mix well.
  3. Press mixture firmly into pan. Freeze 15min or until set, then chill until ready to serve. Serve cut into small pieces.
