I get mine out of the CWA cookbook (just slightly modified!). Here goes:

* 1 1/2 cups of grated zucchini * 1/2 cup corn kernels * 4 eggs, lightly beaten * 1 onion chopped finely * sml amount of ham
* 1 1/2 cups grated cheese * 1 cup self raising flour * 1/3 cup oil

Combine all ingredients, mixing well. Pour ingredients into a greased lamington tin. Bake at 180 degrees for 40-55 mins.

Enjoy!!

Default Zucchini Soup

I love this soup. I hope you like it too.

2 Zucchinis, grated
3 tablespoons plain flour
Vegetable oil for browning flour
750 ml milk
1 cup water
1 / 2 bunch fresh dill, chopped
Salt


Brown the flour with vegetable oil.

Add grated zucchinis, milk and water and start mixing immediately with a table spoon or a whisker.

Mix it until it starts boiling.

Boil it slowly for 10 minutes then add chopped dill. Turned the heather off. Season it with salt.

If it is too thick, you can add some hot water and boil it for a couple of minutes more.

Does the zucchini slice still work if you puree the zucchinis? My DD won't eat anything green so I puree a lot of veges.

Why don't you try yellow zucchinis instead? Or peel the green ones!

As to your question Summerly, Id imagine it would still work with pureeing the zucchini. Maybe just put a little less oil in the mixture because it would probably be a bit more moist with the puree.
