Default Buttery/Garlicky Sauce for Chicken?

Hi gals,

I was just wondering if any of you know a good sauce for chicken breats..preferably not tomato-ey or mushroom-ey, and i like the thought of garlic & butter (have tried just that, and the taste was nice, just a bit too buttery). I love the chicken done in those Breville Healthsmart grills, sooo noice, but a bit bland....

I am picky i know...DH would like a mushroom sauce, but i HATE them and hate tomato ones too. Any help would be great! Thanks in advance...

Have you looked at the packet sauces in the supermarket? Some of them sound really yummy...unfortunatly my DH is a fussy eater when it comes to that sort of thing so I haven't tried any of them.

try making a rissotto with the chicken, its yummy and the kids love it. you can add anything you want then. I add diced pumpkin, chicken, peas, carrots, garlic and anything else you have inthe fridge. I actually leave out the butter and oil and just spray the pan with prespray and just keep an eye on it so it dosent stick. replace the wine with water. hope I have helped.

Have you tried Sharwoods Butter chicken or the Korma is really good too. I find it a bit strong on its own so I add a little cream and its soooo yummy (not too good on the hips tough so its a once a month treat!!)

Hi Shannon,

Found these recipes in the Simply too good to be true cookbooks.

Butter Chicken (serves 6)

800g skinless chicken breasts
cooking spray
1 medium sized onion diced
1 tsp crushed garlic
1/2 tsp crushed ginger
1 tsp cinnamon
1 tsp turmeric
1 tsp dried coriander
2 tsp paprika
1/2 tsp cumin
1/8 tsp chilli powder
2 tsp chicken stock powder
4 tlbs tomato paste
1 tlbs cornflour
1 x 375ml can evaporated light milk

Directions

Cut chicken into bite sized pieces. Coat a large non stick frypan with cooking spray, saute chicken onion, garlic and ginger until chicken pieces are nearly cooked. Add all the spices and stock powder. Combine with chicken for 1 min. Add tom paste and fold through chicken. Blend cornflour with milk then add to pan, stir continuously mixing well until boiled.


Lemon Chicken (serves 4)

4 x 125g skinless chicken breasts
1/4 cup lemon juice
1 tsp lemon rind finely grated
1 tsp chicken stock powder
1/2 cup loosely packed brown suger
2 tlbs honey
1/4 tsp soy sauce
2 tsp cornflour
1/4 cup water

Directions

Coat a large frypan with cooking spray, fry chicken until cooked through turning once. Remove from pan ,leave to one side. Place all other ingredients into pan except water and cornflour. Stir ingredients well until boiling. Combine cornflour with water and add to pan. Bring back to boil, stir continuously. Cut chicken into large slices then return chicken to pan and reheat, coating with sauce.
