Default Does anyone have a good lentil soup recipe?

Hi, I'm after a really yummy lentil soup recipe. I had one and lost it.... silly me. I can eat it till the cows come home.

There's a good curried lentil soup recipe in the WOmen's Weekly Meals in Minutes Cookbook which is really easy and VERY tasty. Let me know if you cant find the book and I will type it up and send it to you.

Alternatively, I make a lentil soup with Roast tomato which I just love with a bit of yoghurt to top it off. Halve some ripe Roma tomatoes (about 1kg) and sprinkle with salt & pepper then drizzle a bit of E.V Olive oil over top. Roast about 1/2 hour.
heat some more oil in a separate saucepan and cook 1 Lge finely chopped onion, 2 tsp cumin powder until onion soft. Add 2 litres of chicken stock and bring to boil. Meanwhile, rinse lentils (I use red) and add to boiling stock. Simmer 20 minutes then cool. Process tomatoes and half the lentil soup until smooth. Return to pan and simmer a further 10 minutes until heated through.

I am soooo hungry right now....

When I was a kid my neighbours mum used to make this - Its really yummy

Italian Red Lentil Soup

Ingredients (my version)

375g packet of red lentils
Large can (800g) of Diced or crushed Tomatos
1 large onion diced
4 sticks of celery diced
2 medium-large carrots diced
4 bacon bones (or 4 rashes bacon diced)
2-3 beef stock cubes
black pepper
Oil
Water
Salt to taste

Instructions
In a large pot - fry onion, celery, bacon pieces (if using) in oil until soft.
Add canned tomatos, Bacon bones (if using) and about 2.5 ltrs water. Add carrots, lentils and then crumble in stock cubes and add a bit of black pepper.

Bring to boil - keep stirring often as the lentils stick, and then simmer for around 1-2 hours until soup thickens and vegetables are cooked - Remeber to keep stirring it often.

If the soup gets too thick add more water until you get the consitancy you want though this soup is supposed to be thick so dont make it too watery
