Default banana muffins please

Hi guys..

I am aftera good recipe for banana muffins. Anything else you can thing of to use up overripe nanas would be great too - aside from banana cake!!

Default look out - it's fattening!

2 1/2 cups self raising flour
1/2 cup brown sugar
1 ripe banana well mushed
1 egg
1 cup of choc chips (white is nice) OR nuts (I like walnuts)
200 mls cream (i told you it's fattening!)
aprox 1/2 cup milk (low fat is fine)
1/2 tsp nutmeg

Mix all your dry ingrediants, then all the wet except for the milk. Use the milk to get the mixture to a nice not-quite-runny mixture. You may not use all the milk or you might need a bit more.... I never know! Sometimes I'm a bit heavy handed wih th nuts or the choc chips. This is also great with a cup of dried apricots instead of a banana, except you leave out the nutmeg.

This is real easy, and a winner with all of us: Quick Mix Banana muffins

125 gm butter
3/4 cup firmly packed brown sugar
2 eggs
1/3 cup (80ml) sour cream
1 1/2 cups self raising flour
1/2 tsp bicarbonate of soda
2 overripe bananas, mashed

Beat butter and sugar in a small bowl with electric mixer until light and fluffy. Add eggs, sour cream, flour and soda; beat on low speed one minute. Stir in banana, put mixture into muffin tin. Bake in moderate oven approx 20-30 minutes. Stand cake 10 minutes, turn onto wire rack. When cold, top cake with lemon icing

Now for the best bit!!
Lemon Icing
1 cup icing sugar mixture
3 tsp soft butter
1 tablespoon lemon juice
2 tsp hot water, approximately

Combine icing sugar, butter and juice in a small bowl; stir in enough water to make a spreadable consistency. Enjoy

This is the besssst cake.........great warmed slightly with a little whipped cream.

You could actually skip EATING the cake and just slather it onto your thighs........cut out the middle man


Upside Down Toffee banana Cake

1 cup caster sugar
1 cup water
2 medium bananas sliced thinly
2 eggs beaten lightly
2/3 cup vegetable oil
3/4 cup firmly packed brown sugar
1 teaspoon vanilla extract
2/3 cup plain flour
1/3 cup wholemeal self raising flour
2 teaspoons mixed spice
1 teaspoon bicarbonate of soda
1 cup mashed banana

Preheat oven to moderate. Greas 22cm cake pan and line with baking paper

Stir caster sugar and the water in a medium saucepan over heat without boiling until sugar dissolves then boil uncovered for about 10 minutes or until caramel in colour. pour toffee into prepared pan and top with sliced banana.

Combine eggs, oil, brown sugar and extract in a medium bowl. Stir in sifted dry ingredients, then mashed banana. pour mixture into pan and bake in moderate oven for about 40 mins.

Turn onto wire rack, remove baking paper and turn cake top side up.

This is fabulous!!!!!!!!!
