    They take a bit to prepare but are actually quite easy otherwise although I was really disappointed with the mango cream. It was supposed to be quite thick but this one was very runny.

    All you need to do is cut a sheet of ready rolled puff pastry into four even squares. Brush them with a bit of milk and bake in the oven. It's best if the squares are weighted down slightly (which I forgot to do this time!!) as they tend to puff up, making it difficult to put the mille feuille together.

    Once cooked, put aside to cool whilst making cream & sauce.

    You need about 3 fresh mangoes or 2 x tins.
    Mango cream
    1/2 cup thick cream
    3 egg yolks
    1/4 cup sugar
    1/2 cup fresh mango puree
    1/3 cup pouring cream, whipped

    Warm the thick cream in a saucepan. Place the egg yolks and sugar in a heatproof bowl and whisk, then stir in warmed cream. Place bowl over a sm saucepan of simmering water and stir often for 25-30mins until thick. Cool, stir in mango puree then fold in whipped cream.

    Mango Sauce
    1 mango
    1 Tab caster sugar
    1 Tab lemon juice

    Puree mango flesh, sugar & lemon in blender until smooth. Pass through sieve or muslin.

    To put together mille feuille:

    Drizzle some of the sauce over a plate. Place one square of pastry in centre. Top with mango cream and some mango slices. Top with remaining square and dust with icing sugar. The remaining sauce can be drizzled over top if you like. (makes 2 desserts).

    You can substitute canned mango if fresh is not available or out of season.
