    Default 4 ingredient recipe thread!

    A place to share your favourite 4 ingredient recipes - tried and tested is best!

    This is one of my faves:

    Chicken fingers

    500g chicken tenderloins (or chicken breast cut into strips)
    1 cup greek yoghurt
    1 cup cornflake crumbs
    1 cup grated parmesan cheese

    Mix cornflake crumbs and parmesan in a bowl. Put greek yoghurt in a separate bowl. Line a baking tray with baking paper. Coat chicken strips in yoghurt, then roll in cornflake & parmesan mixture. Place on oven tray. Bake in the oven until cooked.

    This one is a bit of a cheats recipe, because it uses jar sauce. But it's delicious, and you could easily make your own sauce.
    I mostly make it with puff pastry in a 12 muffin pan (3 sheets of puff pastry) as I always have pastry in the freezer.

    This might be cheating too but it's one of my favourite easy pasta sauces.

    Tinned diced Italian tomato
    Diced onion
    Bacon
    Button mushrooms

    Cook onion in a saucepan until translucent.
    Slice up mushroom and bacon and add to pan. Brown. Add tin of tomatoes with salt and pepper. Cook until reduced slightly.

    Serve over pasta.

    Another quick pasta sauce/ pasta bake recipe, though it has 5 ingredients.

    - 1 or 2 tubs cherry tomatoes
    - Few peeled garlic cloves
    - 1 red capsicum roughly chopped
    - 1/2 onion roughly chopped

    Put all these ingredients into a baking dish, cover with olive oil and season with salt and pepper, toss to coat. Bake in moderate oven for approx 30 mins, until it's all soft.

    Tip everything from the baking dish into a blender, add about 1/4 to 1/2 cup chicken stock (I use stock cubes dissolved in boiling water) and blend. Check seasoning again and adjust to taste. If it's too thick add a bit more stock or water.

    You can either use this as a straight pasta sauce or I sometimes mix it through cooked pasta, put it back into the baking dish and sprinkle with grated cheese, then bake until cheese bubbles. It's a very simple but filling quick meal, one of the few DD will eat.

    1 brown onion diced
    4 rashers bacon, cut into thin strips - about 2 - 3cm long and matchstick width
    Tin of tomatoes
    1 long red chilli finely diced

    Saute onions, bacon and chilli in a frypan. Add tomatoes and simmer until cooked. May need to add some water / second tin of tomatoes. Serve over pasta.

    Default 4 ingredient recipe thread!

    I make cheese base low carb pizza
    -mozzarella cheese
    -Parmesan cheese
    - whatever meat I usually use cabanosi and chicken or bacon
    - physillium husk powder

    Spread both cheeses on a tray lined with baking paper, sprinkle a bit of psyllium husk powder, add whatever meat and bake for 15 minutes. Let sit for 5 minutes then cut.

    My favorite and oh-so-simple to whip up: Chicken noodle frittata.

    Ingredients:
    • Chicken-flavored instant noodles
    • Olive oil
    • Frozen peas
    • 4-5 eggs
    Procedure:
    Add noodles flavor sachet and frozen peas to the noodle cakes broken in half. Boil for 2 minutes, drain. Add this noodle mixture to heated olive oil in a frying pan. Pour the lightly whisked eggs over it and cook for about 5 minutes. Now grill for 4 minutes and serve.

    Chocolate Fruit Cake

    500 grams mixed dried fruit and peel (whatever you prefer.)
    1 cup strong black coffee (Instant is fine)
    1 cup SR Flour
    75 grams fruit and nut chocolate, chopped.

    Place fruit in a bowl and pour in coffee. Cover and stand overnight.
    In the morning, add in the flour and chopped chocolate.
    Pour mixture into a lined loaf pan and bake at 170 degrees for roughly an hour until skewer comes out clean.
    Slice when completely cool.

    Just in time for Christmas!

    Note: If you don't like coffee (not that this recipe will taste like coffee at all) you can soak fruit in one cup of orange juice instead of the coffee )
