This is one of my faves:
500g chicken tenderloins (or chicken breast cut into strips)
1 cup greek yoghurt
1 cup cornflake crumbs
1 cup grated parmesan cheese
Mix cornflake crumbs and parmesan in a bowl. Put greek yoghurt in a separate bowl. Line a baking tray with baking paper. Coat chicken strips in yoghurt, then roll in cornflake & parmesan mixture. Place on oven tray. Bake in the oven until cooked.
