    The two I'm always asked for are:

    Baby spinach, red onion, cubed roast sweet potato, pistachios, crumbled feta (I use Danish), honey mustard dressing (I've given up on making it and just buy Paul Newman's one).

    Cucumber, pomegranate, pistachio, feta, mint, lemon juice and olive oil.

    My family does a rocket, mango, slivered almond and Spanish onion one which is also amazing. I think they just use a little balsamic vinegar as the dressing.

    I've been told that I should look in pinterest for the mason jar salads - you can prep Sunday and have a week of lunches that stay fresh. Might be worth a look?

    This is a nice warm salad : chicken, bacon, avocado, pan fried asparagus or broccolini, feta & baby spinach.

    Ok. This is my salad that I make 3 times a week. (It's my "diet" salad"
    Chicken
    Lettuce
    Cucumber
    Tomato
    Grated carrot
    Salmon
    Zucchini
    Red capsicum
    Green capsicum
    Anchovies
    Fetta
    Ceaser dressing
    Mushrooms
    Baby spinach
    That's my basic salad for lunch....

    But reading some of these salads I might be adding more......
    I also have raw cauliflower.

    Yep, I sauté in olive oil with a bit of lemon pepper.

    I like use raw zoodles (zucchini noodles) OR broccolini, rocket, pinenuts or sunflower seeds (or whatever other nuts tbh - raw), crumbled feta and raw cherry tomatoes OR precooked with a little salt in the oven the night before so they shrivel a bit. Kinda like semi-dried tomatoes but a little different. Add avo or snow peas or sliced brussels sprouts or whatever too. Sometimes quinoa or brown rice.

    And then some sort of canned fish or roasted chicken. Generally it's a sachet of salmon... and then I squeeze over some fresh lemon juice.

    I take this to work and eat cold because all we have is a small fridge, but it's really quite yum.

    I love the chick pea salad I make.
    Cup of chickpeas, chilli, coriander, 2 tablespoons of coconut cream and coconut.
    Dressing; splash of lime juice and garlic, fish sauce or vinegar, pinch of sugar if you like.
    Mix through the chickpeas.
    Recommended to have chopped mango in it but I have substituted the mango with both feta and avocado. Tend to alternate. Hubby and kids love it too! Also keeps for a good few days if you make extra.

    Tonight we had a beef and haloumi salad.

    Just a bag of rocket and baby spinach, red and green cap, cucumber, red onion, cherry tomatoes, black kalamata olives, fried haloumi slices and a piece of scotch fillet seasoned with paprika, salt and white pepper - cooked then sliced thickly and added. Balsamic dressing. Super yum and feels pretty healthy. DH and I just gave 1 bowl with 2 spoons and that's dinner.
