The two I'm always asked for are:
Baby spinach, red onion, cubed roast sweet potato, pistachios, crumbled feta (I use Danish), honey mustard dressing (I've given up on making it and just buy Paul Newman's one).
Cucumber, pomegranate, pistachio, feta, mint, lemon juice and olive oil.
My family does a rocket, mango, slivered almond and Spanish onion one which is also amazing. I think they just use a little balsamic vinegar as the dressing.
I've been told that I should look in pinterest for the mason jar salads - you can prep Sunday and have a week of lunches that stay fresh. Might be worth a look?
