    Default risottos / pasta and vegetarian food suggestions

    Im looking at overhauling mine and my kids diets, lessening the amount of crappy 'meats' we eat etc

    So any rissotto / rice / pasta suggestions and also vegetarian main suggestions (that dont just use fake meats) would be appreciated

    Default risottos / pasta and vegetarian food suggestions

    I'm ovo-lacto vegetarian (so eat dairy and eggs) and have been since I was 17. Some easy vegetarian meals that go well with meat eaters (the rest of my family) are:

    Risottos

    Roast pumpkin, spinach and feta
    Pea and asparagus
    Roast sweet potato and sundried tomato

    Pasta
    Spinach and ricotta lasagne/cannelloni or stuffed shells
    Roast vegetable lasagne
    Parmesan and spinach orzo
    Below use any shape pasta
    Roast cherry tomato and basil sauce
    Creamy pumpkin and spinach sauce
    Pea, asparagus and Parmesan

    Rice

    Fried rice with egg, carrot, zucchini, peas, corn, bean shoots and Bok choy



    Mushroom sauces for pasta and in risotto is also a good source of nutrients. I am allergic (anaphylaxis) so they don't come in the house! Hence why no suggestions above 😊

    Other vegetarian mains

    Stir fry vegetables with rice or noodles
    Omelettes and frittatas
    Felafel wraps
    Vegetable soup - usually my go to at the end of the week when everything is looking a bit sad.
    Roast pumpkin soup
    Potato and leek soup
    Warm vegetable salads
    Vegetarian burgers (with homemade vegetable patties)
    Vegetable fritters and salad

    I can provide recipes or more detail if you want.

    Pearl couscous is our current favourite. Can eat hot or cold. I normally put bacon in it but would still be yummy without.

    Pitta bread pizza. We use shop bought sauce, onions, mushrooms, baby spinach, red pepper & cheese. You could also use sun dried tomatos, olives, basil... Whatever your favourite veggies are! DS makes his own, I've found its a great way to get him eating lots of veggies.

    I try to only do pasta once a week so usually do a roasted cherry tomato, garlic and basil spaghetti or penne eggplant in a pink sauce ( sautée onion, garlic , eggplant add tomatoes, basil and thyme and at the end stir in a big table spoon of creme frache )

    Falafel kebabs are always a hit - just falafels with tabouli and tzatiki wrapped in pita bread and toasted

    Chickpea burgers

    Spinach and feta pizzas

    Stir frys with loads of veggies and rice noodles

    Lentil or veggie soup with crusty bread

    Roasted tomato, parmasean cheese tarts

    Caramelised red onion and goats cheese quiche

    Do you eat much fish? Adding salmon a few times a week to stir frys or tacos is a healthy option as well

    I make a vegetarian bolognese sauce with red lentils, onions, garlic, couple of tins of tomato, diced carrot plus whatever veges we have on hand eg celery. I then sprinkle pine nuts on top to serve.

    Leek/lentil/mushroom lasagne

    Chick pea patties

    I also make a leek and potato soup as a base and add whatever veges I feel like plus a couple of tins of kidney beans and chickpeas (you could soak and cook your own).

    Homemade baked beans are cheap, healthy and very filling.

    A yummy creamy vegan pasta sauce is to chuck 1-2 garlic cloves and some fresh basil in the food processor, blitz then add 1-2Tbs lemon juice, 1 Tbs olive oil and an avocado plus salt and pepper. Serve with cooked pasta.
