    Default Vanilla cupcake recipe

    Hi ladies! Looking for your go to cupcake recipe! Something yummy but not full of sugar.
    Needing for day care, I have bought the egg replacement stuff. They need to be egg and nut free and I usually just make them from a box but to be safe I'd rather make from scratch. I tested some cupcakes with the egg replacement powder and they seemed dry but I'm not 100% sure if it was the powder or just the mix I had. So anyone who uses this stuff if u have some tips would be great!

    So please.. Give me your go to cupcake recipe!

    I use my nan's recipe.

    4 oz soft butter
    1/2 cup castor sugar
    2 eggs
    3/4 cup of milk
    1 tsp vanilla extract/paste (I tend to add more like a tbsp)
    2 c self-raising flour

    Cream butter, sugar and vanilla. Add eggs and beat, fold in half flour and milk alternately. Bake at 175c for 15 min, 10 for mini cupcakes. Haven't tried this recipe with the egg replacement stuff but these are my go to vanilla cupcakes.
