Veg meals are usually quick and easy. Tacos using mushrooms, onion, capsicum and kidney beans, just fry all veg, add kidney beans, seasoning and a touch of water. Let simmer while you chop tomato, lettuce etc.
Veg curry. Diced potato or pumpkin, cauliflower and chickpeas chuck in a pot with a curry sauce or use a good paste and simmer till veg cooked. Serve with rice or cous cous.
Jacket potatos cooked in microwave top with savoury mince or bacon, cheese, sour cream, shallots or baked beans, cheese, sour cream and avocado or coleslaw, cheese and sour cream.
