One I really like lately is actually a Pete Evans one. Here's the recipe (it's for "Butter Chicken", but I use the same sauce for beef and lamb and it turns out really nicely).
Fry 1 diced onion in 4 tablespoons of coconut oil over medium heat for three minutes. Then add 4 crushed garlic cloves, 2 tsps garam masala, 1 tsp cardamom, 1 tsp ground coriander, 1 tsp ground cumin, 1 tsp ground ginger, 1/2 tsp paprika and 1 tsp turmeric. Add 3 tbsps tomato paste, cook off for a minute, then add 1 tsp sea salt (I find this too much for me - prefer 1/2) 2 tbsps lemon juice or vinegar, 1 x 400 ml can coconut cream (milk works just as well).
After this is at a simmer, I pour it over the meat chunks in the slow cooker, pop it on low for about 4 hours. Really tasty, and worth all the fiddly spices.
Errrr mer gehrd! Sooooo good! The meat just fell apart. Yummmmmm!
