    Hi, I've been asked to make a salad for tomorrow evening and want to make something new. So what's your favourite salad recipe....would love some inspiration

    Default Favourite salad recipe

    Quinoa tabouli is my all time fav and even newbies who think they won't like quinoa always love it!

    1 cup cooked quinoa
    2 cucumbers diced
    3 roma tomatoes diced
    1/2 red onion diced
    1 bunch fresh parsley chopped
    Seeds from 1 pomegranate
    1/2 cup feta
    Teaspoon sesame seeds

    Put all in a big bowl and squeeze over juice of 2 lemons, a big glug of caramelised balsamic vinegar and drizzle of olive oil and mix!

    Or

    Raw veggie super salad
    Chop all these into the same size small cube add goats cheese, lemon juice and white balsamic vinegar

    1/2 head broccoli
    1/2 head cauliflower
    2 baby beetroots
    2 stalks celery
    2 small carrots
    1 green apple
    1/2 bunch parsley

    Or

    Roast pumpkin and haloumi

    Cube pumpkin and roast
    Rocket
    Red onion
    Toasted pine nuts
    Grilled haloumi cubed

    Toss together with lemon juice, olive oil and caramalised balsamic vinegar

    I have two faves. Roast pumpkin salad (cubes of roast pumpkin, baby spinach, feta, toasted pine nuts with balsamic glaze) and the changs crunchy noodle salad (buy the changs crunchy noodles and recipe is on the pack). Yum yum!

    I've got a couple. The potato salad I posted in the potato salad thread is one.

    Roasted sweet potato, rocket and feta
    Rocket
    Roasted sweet potato (about 1 cm cubes)
    Diced or crumbled feta
    Sliced Spanish onion
    Pistachios
    Paul Newman's honey mustard dressing

    I usually use Danish feta.
    You can also add cubed roasted beetroot.

    Cucumber and pomegranate salad
    2 continental Cucumbers (I cut into 1 cm thick rounds, then quarter the rounds)
    Pistachios
    Feta (I'm using Tasmanian or Riverina feta) diced or crumbled
    Seeds from a pomegranate (about 3/4 of them - do what looks right. Keep the rest for pomegranate mojitos - yum!!!)
    Some lemon juice and olive oil to dress.
