    1 kg Boiled potatoes, skin on
    A little over half a carton of sour cream
    Maybe 1.5 heaped tbsp mayo About 2 tsp dijon mustard
    About half a small Spanish onion, diced
    A small handful of finely shredded basil
    A bit more mint than basil
    About 5 or 6 rashers of bacon diced and cooked in the oven
    Salt and pepper to taste

    It's delish, and everyone asks me to bring it to all family events.

    We make it with homemade mayo and peas. It's delicious. I can't stand store bought mayo as its too sweet

    Mine is just potato, heaps of diced crispy bacon, whole egg mayo, salt and pepper and spring onion to finish.
    It's what I do when people come unexpectedly.

    I do potatoes and sweet potato. With caramelised onions. Fried garlic and prosciutto and some continental parsley with aioli.
    Super yummy.
