    Anything but boiled egg! Can't stand egg in potato salad!

    Mine is potato, red onion, bacon, garlic (fried together) with a dressing made off mayonaise, sour cream and dijon mustard

    Mine is really similar to yours, except I use Caesar dressing, sour cream and seeded mustard. It's so yummy!

    Yum! I have used seeded mustard before, but the kids don't like it. So I changed to dijon and they will happily eat it now.

    Chopped baby chat potatoes skin on
    Finely chopped red onion
    Fresh chopped parsley
    Fresh chopped chives - dressing made with:
    Mayonnaise , dijon, white balsamic vinegar, salt, pepper, lemon juice

    I cheat but it's a favourite:

    Boiled and diced potatoes with skin on
    Mix through grated cheese
    Diced red onion (or spring onion)
    Chopped up sliced ham
    ETA potato salad dressing (no substitute)
    And some cream too....

    I used to work in a deli and this was the recipe we used to make the potato salad we sold.

    Boiled red skin potatoes skin on.
    Sour cream, seeded mustard, spring onions, lemon zest, salt & pepper.
    I don't measure I just kinda throw it all in until I'm happy.
    I am also quite partial to boiled eggs in potato salad so sometimes I throw in a couple!

    I use whole egg mayo and a dash of horseradish cream... pinched that one from the cooking show Ready Steady Cook. Diced potato, spring onion, diced bacon.

    Red onion, chives, boiled eggs, whole egg mayo, grainy mustard, diced gherkin, and either bacon or fried prosciutto.
