    I was going to say choc ripple cake too. I hate making desserts, but a choc ripple cake is easy peasy. I dont add sugar to the cream because I find it too sweet. You can google heaps of recipes.

    Last time I made it I dropped a tiny tiny tiny bit of mint essence on to every second biscuit so it had a very subtle choc mint flavour.

    Cream caramel pie.
    Pkt biscuits crushed (I use scotch fingers), 1/2 block butter melted, cinnamon, press into base
    2 cups cream 2 cups milk 2/3 cups custard powder. Mix together in Jan and bring to boil/ thick. Separate pan 1/2 Block butter 1 1/2 cups brown sugar. Bring to boil add to custard. Mix well put over base and refrigerate. Optional add whipped cream and caramel ice cream topping or crushed biscuits on top.

    I do an ice- cream one too.

    I just get 2L vanilla ice cream and a store bought Christmas cake and some brandy (optional).

    I let the ice cream soften then, in a pudding type shaped bowel that's lined with glad wrap, do a layer of ice- creAm, then cake, ice cream, cake etc. Add the brandy to the cake layers of you want it.

    Pop in the freezer to harden up then you are good to go - just turn out onto a serving plate - add a sprig of holy.

    I'm sure what ever you do will be fab!

    Default Christmas dessert?

    My go to is always a pavlova. Made from scratch. So easy to do and the fresh passion fruit and strawberries make it delish!

    Might have to steal @Elijahs Mum's idea and make some mars bar slice cut out in Christmas shapes. If I had mars bars and rice bubbles I'd do it now...

    I'm doing some sort of pav - either indivual mini pavs or a wreath - but I'll serve with berries and cream either way.
