    I think the staleness is from the bread not having preservatives like bought bread. Mine is only good the day I make it and the next day.

    With the bread machine you can either use bread mix or make from your own recipe. I have a Panasonic (it is freaking huge) and you just pop the yeast in the bottom then other dry ingredients and water on top and set the timer for what time you want it ready and how dark the crust. It takes at least 4hrs then to make the loaf, does all the mixing, kneading, proving and final bake. It does make a lovely loaf and I definitely make bread more often than I would without the machine.
