I'm quite pleased with these - I made risotto last night and thought I'd let DS have a go at eating with a spoon. Worst mistake, it was like a rice apocalypse in the kitchen. So wanted to turn them into a nice tidy finger food, I mixed a bowl of leftovers with an egg, sprinkled some cheese on top and baked them in the mini muffin tray. Perfect toddler food!
(I know arancini is better with leftover risotto but who has time/patience to roll rice into little balls and into breadcrumbs?!)
