    It's on the Taste app - 2 tins of chickpeas, a handful of parsley, 2 cloves garlic, teaspoon cumin, teaspoon ground coriander seeds, 1 egg white. Blitz it all in a food processor. I over-processed these so they were a little mushy.

    I'm quite pleased with these - I made risotto last night and thought I'd let DS have a go at eating with a spoon. Worst mistake, it was like a rice apocalypse in the kitchen. So wanted to turn them into a nice tidy finger food, I mixed a bowl of leftovers with an egg, sprinkled some cheese on top and baked them in the mini muffin tray. Perfect toddler food!
    (I know arancini is better with leftover risotto but who has time/patience to roll rice into little balls and into breadcrumbs?!)

    I do this all the time. I've just frozen a whole lot using leftover bolognese and rice, a broccoli risotto, and a Mexican beef/rice mix. DD4 loves it and will take it for preschool lunches.
