home made Italian croquettes

1 cup of long grain rice
2 large potato
handful of Parmesan cheese
handful of shredded tasty cheese
handful of chopped fresh parsley
salt / pepper
extra eggs for egg wash
cook the rice as normal preferably a day before or at least 5 hours before. the rice must be cold.
boil potatoes and then mash. also this must be cold so do same time as rice.
once cooked allow to cool in fridge.
mix all ingredients besides breadcrumbs until well combined. then shape into logs using your hands. ensure hands are wet.
dip in egg wash then breadcrumbs and deep fry ( u can shallow fry but deep is better)

Ingredients: mince meat
Boil rice until cooked.
chop chorizo and onion ( brown onion is better) into small cubes and fry in pan until onion translucent and chorizo cooked then add mince meat and cook until brown then add canned tomato and salt and pepper. (You may add any other ingredients like carrots, peas)
Once rice is cooked add to mince meat mixture until all combined.
Fill the capsicums with the mixture.
Cook in oven 180 for about 45-1hour.

Brunch- green scrambled eggs (spinach, 20g of cheese, avo and onion) with some yummy snacking tomatoes on the side.
Followed up with a juicy mango.
