    I sort of make it up every time and traditionally you should add chorizo and chicken but I don't as I don't eat those so I do a totally seafood one! It's This is what I normally do :

    500g paella rice
    Prawn oil
    2lt crab stock ( or veggie or fish) hot
    2 brown onions diced
    4 cloves garlic grated
    4 whole roma tomatoes chopped ( or 1 tin)
    1 small red and green capsicum diced
    1/2 teaspoon Saffron mixed with 1/4 cup fish stock
    Bunch fresh parsley
    2 cups frozen peas
    12 scampi ( or large prawns)
    1/2 kilo mussels and 1/2 kilo pippies
    2 Calamari tubes cut into rings
    2 skinless boneless snapper fillets cubed


    To make your prawn oil: Peel the green prawns and add the shells to a saucepan with 1/2 cup olive oil and boil on a low heat for about 20 mins ( chop up all veggies and seafood while waiting)

    Heat your paella pan over medium heat and fry onions and garlic and capsicum in prawn oil , sautée for 5 mins, add rice and stir, add stock and saffron mixture and stir again then cover leave to cook for about 20 minutes, add fish and cover for a few minutes then add prawns, calamari, mussels and peas and cover again for 5 mins until mussels are open and all seafood is cooked
    Sprinkle with fresh chopped parsley and lemon wedges serve in the pan!
