    Salmon super salad ( baked salmon tossed through kale, carrot and red cabbage coleslaw) we just had a huge lunch at a mexican restaurant so need a healthy dinner!

    Lacking motivation here as im feeling average and dh at cricket. So kids had frankfurts, toast and fruit. I will have left over rice and vegetable curry once they are all settled.

    Yummy Sanitarium vegie roast with roasted kipfler and sweet potatoes and steamed carrots and broccoli. I got back from seeing our neighbours and DH had it all ready to go.

    We had lemon and garlic chicken with a warm salad. The bed of the salad was baby spinach, fresh basil, avocado and Persian fetta topped with slow roasted butternut pumpkin, capsicum and onion roasted with some maple syrup, balsamic vinegar and sesame oil. The chicken breast was marinated with lemon, garlic and olive oil before being pan-fried.

    For dessert we had Greek shortbread and yummy fresh strawberries from a farmer's market.

    Still have left over roasted veges which I will turn into a frittata slice for a picnic lunch tomorrow.
