    Cottage pie! My girls love it, I throw some baked beans in there with it too.

    Ocean trout and thin egg noodles with a sesame, ginger, soy & orange sauce. It's literally my favorite dinner ever and I can't freakin wait.

    A warm salad of green beans, sugar snaps, brocolini, baby asparagus, cherry tomatoes, crispy chat potatoes and boiled egg (DH and DS2 have a bit of fillet steak as well). Dressed with some olive oil, balsamic vinegar and mustard.

    Default Tonight we're smashing into...#3

    @turquoisecoast No I just had a major craving for greens this afternoon!

    It was very simple though:

    2 bunches of brocolini ends trimmed and cut in half
    1 bunch mini asparagus cut in half
    300g green beans trimmed chopped into about 4 cm pieces
    200g sugar snaps trimmed cut in half
    4 boiled eggs quartered
    8 baby chat potatoes
    Large handful of cherry tomatoes (I just picked what was ripe from the pot!) cut in half

    For the potatoes I cheated and partially cooked them in the microwave whole. Then sliced them thickly and popped them in a pan with some olive oil to crisp up.

    I blanched the greens until just tender. Tossed it all in a bowl and dressed it -

    60ml olive oil
    30ml balsamic vinegar
    1 teaspoon seeded mustard
    A tiny bit of honey a drizzle.

    I didn't use all this dressing. It turned out super yummy and with the eggs and potatoes very filling for me (I'm vegetarian).
