    Default Individual Fruit cakes ... do you have a recipe?

    Hi all

    I am after a recipe for individual fruit cakes... or a way to adapt a full size cake recipe...

    any help will be appreciated

    I would like to make some as christmas pressies... cant find anything via google...

    Tracey - I will get back to you with specifics when my Mum returns from her walk, but she was suggesting that we make the normal cake recipe and bake them in patty cases in muffin tins to bundle for presents - I don't think that you need to adjust the recipe, just the cooking time.

    My mum does this & i have too ( they are yum ! ) not sure if its exactly what you want but here goes ! Nothing is exact btw.

    Just get a normal fruit cake light or dark, green & red glazed cherries, icing sugar & whatever you prefer either a brandy or rum ( i prefer brandy ) then basically break the cake up in a bowl using however much brandy or rum to make it soft & pliable. Roll them in to whatever size you would like we usually go for bite size they are yum ! We then make up white icing which gets drizzled over the top & then we cut the cherries in halves adding a red & a green to the top then pop them into the fridge to harden. YUM !

    If using patty cases, I would triple them up because of the longer cooking time.

    I Have A Recipe From Feast By Nigella Lawson For Jewelled Cupcakes...not Sure If You Can Google It - If Not I Can Pm U As I Not Sure If Mods Will Let Me Type It Out Copyright Etc...it is basically chrissy cake in cupcake size...

    I have one it is VERY EASY......

    Petite Xmas Puddings

    Ingredients:
    1x bought fruit cake
    Half a block of white chocolate (125g)
    Red and green lollies to decorate (ie jelly babies, jube rings, snakes)
    Sherry, brandy or Orange Juice

    Directions:

    Dice the cake, pur on top a few tablespoons of alcohol or orange juice to moisten, mix really well altogether with your hands.
    Roll into small halls and place onto a tray lined with baking paper. You should get about 30 or so. Melt chocolate in the microwave, drizzle on top, use lollies to decorate.
