My chicken schnitzel always has a layer of dijon mustard spread over the chicken instead of flour. Then into the egg wash, and my breadcrumb mixture is crumbed stale bread (or fresh if I have no stale, it doesn't make much of a difference) with a healthy dose of grated parmesan (not the shaker stuff- the real cheese).
It tastes amazing.
For the mashed potato have you tried Colcannon?

What is calcanon?
It's an Irish dish of mashed potato, cabbage and bacon and very delicious
