    Default Mash potato ideas and chicken schnitzel

    Looking for a twist on these 2 meals.

    How do you make each of the above?

    Adult and child friendly.

    Mash potato- I usually do sweet potato and potato mash. Butter, milk, salt and pepper. I will sometimes add a touch of garlic to it as well.

    Mash potato- i add garlic to the water while cooking the potato. Then I mash it with cream cheese, butter and a dash of milk. Dd2 hates mash potato but loves 'creamy cheesy mash'.

    Schnitzel i usually add parmigiana sauce, ham and cheese.

    Either do cauliflower mash/ purée instead or add cauliflower to the potato. Either that or add carrots/ sweet potato.

    With schnitzels, I add cheese & herbs to the crumb. Can add almond meal as well.

    Sauted onion and bacon stirred through the mash

    Schnitzel crumb with bashed cornflakes or season your breadcrumb with cheese, herbs and garlic

    A good crumb for kids schnitzel is quinoa crumbs ( you can buy at supermarket) mixed with chia seeds , parmesan cheese and baby spinach , I use this for fish as well but just add lemon zest and black pepper

    For mash potato, stir through sautéed leeks or cabbage (sneaky veggies)

    For chicken schnitzel, a couple of different options:
    • grated Parmesan in with the breadcrumbs
    • use polenta instead of breadcrumbs - this goes so crunchy!
    • lay the flat chicken pieces in a baking dish, makewith a crumb mix of breadcrumbs/polenta, finely sliced shallots, grated Parmesan, lemon zest and melted butter, then cover the cover with the crumb mix and bake in the oven until the chicken is cooked and the crumb mix is golden. When you bring it out of the oven sprinkle with squeezed lemon juice and chopped parsley (this is a favourite in our house)

    Mashed potato- I love cooking the potato, draining it and then adding avocado while mashing. Add a sprinkle of grated cheese and some diced bacon. Mmm

    With chicken schnitzel, we went to a friends for dinner and they made schnitzel crumbed in crushed Ritz biscuits and cheddar cheese. It was oven baked and soooo good!
