So far we've had
Malay chicken with rice and broccolini
Lamb and feta rissoles with roasted potatoes and carrots
Tomorrow is lamb rack with creamed cannellini beans and steamed green beans
Friday is pasta with sun dried, feta and spinach
Saturday we're out, Sunday we'll decide on the day. Probably home made pizza.
Haven't had a proper plan this week, but so far we've had:
-haloumi, beetroot & lentil salad
-nachos (with kidney beans & homemade salsa)
-potato gems and salad (that was a fancy one :P)
-chicken & broccoli tikka masala with rice
Tomorrow will be takeaway as we'll have guests
Next planned meal is homemade pizza

I cooked dh a spur of the moment dinner last night, super easy and very tasty. Cant remember the name of it though lol.
250g chicken breast sliced finely
Handful of green prawns, peeled (these can be left out)
1 bunch shallots chopped finely
5 tsp garlic
Rice stick noodles
1 tbsp dark soy sauce
1 tbsp light soy sauce
3 eggs, beaten
1 tbsp oil
Heat oil in wok on high heat. Pour in egg and swirl around base until set. Slide onto chopping board and shred. Meanwhile, pour boiling water over rice stick noodles in a heatproof container and leave to the side.
Add chicken to wok, stirfry until cooked through. Add prawns and stirfry until cooked. Add garlic and shallots and stirfry for 2 mins.
Drain noodles and toss through chicken and prawns.
Pour in sauces and toss to mix evenly.
