    Default Hit me with your muffin, fruit muffin/bread, quiche recipes please

    Hello all, I'm looking for recipes to inspire me for my 11 month old (nearly) and toddler. I'll use the same recipe. But no honey or nuts.

    Or anything that's popular with your bub/child.

    I have heaps but these are the easiest - quiches take more time as you have to make the pastry ( but are yummy!)


    Spinach and corn mini frittatas
    Ingredients:

    6 eggs
    1/3 cup cream
    1/3 cup tasty cheese grated
    Tablespoon chia seeds
    Handful chopped baby spinach
    Handful of corn kernels or peas
    Any fresh herb you have

    Pre heat oven to 180, oil/butter a muffin tin ( or use patty cases) and beat eggs and cream in bowl, add other ingredients and spoon mixture into muffin tin ( about 3/4 full) and bake for 20 mins ( you can add any protein and veggies )


    Mini zucchini slice

    5 eggs
    Glug olive oil
    2 zucchini grated
    1 carrot grated
    1/2 onion grated
    1 cup grated tasty cheese
    Corn from 1 corn cob (cooked)
    1 Tablespoon chopped chives ( or any herb)
    1 Tablespoon chia seeds
    1 cup wholemeal self raising flour ( sifted)
    Black pepper

    Mix eggs in big bowl, sift over flour, mix well and mix in the rest of the ingredients and pour into lined square cake tin or slice tin ( or muffin tins) and bake in pre heated 175 oven for 30 mins - you could add tuna if you wanted more protein!


    Tuna quinoa patties

    1 small tin tuna in spring water
    1 cup cooked quinoa
    1/2 cup rice crumbs
    Tablespoon chia seeds
    Squeeze lemon juice
    Fresh chopped parsley
    1 egg

    Mix all together and shape into patties, put in fridge for 1/2 hour then shallow fry or oven bake


    Mini caramelised onion, chive and goats cheese quiches
    Ingredients:

    2 cups plain flour ( can use wholemeal)
    150g butter chopped
    1 egg yolk
    1/4 cup water chilled
    3 eggs
    1/3 cup cream
    2 red onions
    Goats cheese ( or feta)
    Chopped fresh chives

    Place flour and butter in a food processor. Process until mixture resembles fine breadcrumbs. Add egg yolk and chilled water. Process until dough just comes together. Turn on to a lightly floured surface. Knead until smooth. Using a lightly floured rolling pin, flatten dough into a 15cm round. Wrap in plastic wrap. Refrigerate for 30 minutes

    Slice onions finely and cook on low heat in saucepan with a good splash of olive oil for approx 15 mins until caramelised

    Preheat oven to 180°- Lightly grease two 12-hole muffin tins Roll out pastry between 2 sheets of baking paper until 3mm thick. cut 24 rounds from pastry. Press pastry rounds into prepared pans. Pierce bases with a fork. Freeze for 20 minutes or until firm.

    Using a fork, lightly beat 1 egg in a bowl. Brush egg over pastry rounds. Bake for 10 to 12 minutes or until light golden.

    Place cream and remaining eggs in a jug. Lightly beat to combine. Spoon onion mixture into pastry cases, crumb goats cheese over the onion Pour 2 teaspoons of egg mixture over fillings. Sprinkle chopped chives on the top Bake for 20 to 25 minutes or until golden and filling has set
